This new classification of whiskey is made, aged, and bottled entirely at a single distillery, allowing us to highlight the distinctive character of Northern California. Our coastal distillery echoes the maritime influence of the Islay coast, where gentle salinity subtly shapes the spirit’s profile. After first housing our bourbon, the barrels are reclaimed and refilled with this emerging style of whiskey, then aged and thoughtfully blended on site to express both a sense of place and process.
 
Recipe/Approach:
Our Maritime Single Malt, distilled with “Gallagher’s Best” and “Kilnsmith Barley” from Admiral Maltings in Alameda, offers a refined expression of an unconventional American whiskey. This emerging style nods to European peat traditions while remaining distinctly Californian. We intentionally avoid an overly smoky profile, allowing the character of California-grown barley to lead. The added roast on the Kilnsmith malt brings depth to this bottle. Layers of chocolate and gentle smoke enhance the spirit without overpowering its balance or sense of place.
 
Tasting Notes:
Rich flavors transport you to the crisp fall months of Half Moon Bay; with dry graham crackers and blistered marshmallows clustered around beach bonfires. A sophisticated chocolate ganache nestled in this whiskey makes its present on the nose, with a toasty cereal finish on the palate. The charred barrel transcends on this smokey, yet caramel sweet, execution of a Maritime Single Malt that represents the Northern California Coast in its golden liquid.
 
Aroma:
Bold aromas of toasted barley lead the scent, layered with smoky cocoa and s’mores-like graham cracker notes. The nose finishes with a cereal-driven sweetness and a light touch of oak, it is present but never overly woody. Subtle vegetal and musty undertones lend a faintly green character, adding depth to this lightly aged whiskey.
