At Jettywave Distillery, every bottle is shaped by the Coastside, our ingredients, our people, and the way we make everything on site. From botanical gin to grain-to-glass whiskey and the distillates that round out our bar program, these spirits are a reflection of place, process, and the community we’re proud to build in Half Moon Bay.
OUR SIGNATURE SPIRIT
California Botanical Gin

Jettywave’s California Botanical Gin began as a deeply personal project for co-founder Tanya Slye. Coming from a long line of Czech farmers, Tanya’s connection to the land runs deep. She studied organic farming in Santa Cruz, and built a career rooted in botanicals, from growing flowers, to floral design and garden design. That lifelong relationship with plants, paired with a firm belief in supporting local agriculture, became the foundation for our gin. To this day, we source our botanicals as locally as possible, letting California’s landscape shape the spirit in the bottle.
The result is a gin that is layered, expressive, and unmistakably coastal California. It’s also a gin that has earned national recognition, including being named Best Craft Gin by Rolling Stone Magazine and receiving Best of the Best and Double Gold from Sunset Magazine. Along the way, it even caught the attention of the owner of the world’s largest gin collection, who called it one of his personal favorites.
At its core, Jettywave’s California Botanical Gin is a reflection of place, plants, and the hands that shaped it. Gin crafted with intention, curiosity, and a deep respect for the botanicals that make California so special.
GRAIN TO GLASS
California Whiskey, Made in Half Moon Bay
Jettywave’s whiskey begins with grain grown in our home state of California. In partnership with Admiral Maltings in Alameda, each harvest follows a deliberate path. From the hands of local farmers to careful malting at Admiral Maltings, then onward to Half Moon Bay, where it is cooked, fermented, distilled, and patiently aged on site.
Every bottle is truly grain-to-glass, crafted entirely in Half Moon Bay. Choosing not to source whiskey was a defining decision for us; it allows us to remain deeply connected to the land and the people behind our product. Supporting California agriculture isn’t just part of our process, it's central to who we are and what we value.

Beyond gin and whiskey, these small-batch bottles showcase what we love most about making spirits in Half Moon Bay: working with real ingredients, sourcing locally whenever possible, and building flavors that feel rooted in the Coastside. From herbs and honey to coffee and citrus, each one is crafted to bring something special to your home bar—and to the cocktails we pour at Jettywave Distillery.

Small Batch Absinthe
Our absinthe is built like a walk through the garden—bright, herbal, and unapologetically botanical. We lean into fresh, locally sourced herbs whenever possible, including ingredients grown at Filoli, to create a spirit that’s expressive in cocktails and captivating when served the traditional way.
Bourbon Barrel–Aged Coffee Liqueur
This coffee liqueur is crafted in collaboration with our Coastside neighbors—using coffee sourced from Soul Grind and aged in bourbon oak casks for depth, softness, and a richer finish. It’s designed for espresso martinis, after-dinner sipping, and any moment that calls for something dark, smooth, and a little unexpected.
Barrel–Aged Orange Liqueur
Made with real citrus and sweetened with locally sourced honey—including honey from Half Moon Honey—this orange liqueur is all about balance: bright fruit, a softer barrel-rested finish, and just enough warmth to elevate margaritas, lemon drops, and sunset pours.
