When we opened Jettywave, we set out to create an authentic California whiskey, distilled and aged in Half Moon Bay. It begins with our farmers and a deep connection to the agriculture that makes each bottle possible. Using California-grown corn and barley sourced within 150 miles of our distillery, we craft a whiskey that is distinctly our own. Our barley is malted by our trusted partners at Admiral Maltings, whose dedication ensures exceptional performance in the still. Mashed, fermented, distilled, and aged entirely on site, this whiskey is a true expression of Northern California. As the barrels rest harborside for years, a subtle hint of ocean brine weaves into the spirit, shaping its character before it reaches maturity.
 
Recipe/Approach:
Our mashbill of 80% corn, 20% barely highlights the natural sweetness and layered complexity of our locally grown grains. preserving freshness and depth of flavor before it ever reaches the tank. Open fermentation lasts four to five days, shaped by the presence of the Bay Area fog, where coastal salinity mingles with native yeasts to begin the transformation. We then strip the mash on the grain before moving into final distillation, watching the still closely to retain as much true grain character as possible. The spirit rests in a brand new, American Oak barrel and is aged for two to three years. We began with small five-gallon barrels to remain fully on site-driven and now age in sizes ranging from 15 to 60 gallons. After aging, each barrel is tasted and bottled on its own, never blended, allowing every expression to stand apart. On rare occasions, select barrels are released at full barrel strength as part of our Distiller’s Select cut. 
 
Tasting Notes:
Our Bourbon whiskey is aged in new American oak barrels that help impart flavor to our previous “Half Moon Shine”. Jettywave Small Batch Bourbon is completed with flavors like caramel, honeysuckle, almonds, and cinnamon from resting in our harbor based distillery. Each cask presents its own unique flavor of whiskey depending on its barrel size and time aged. Our lack of whiskey barrel blending makes for a new experience every time!

Aroma:
The nose opens with hearty oak, immediately softened by sweet waves of vanilla bean and warm salted caramel. Nutty tones of pecan and praline follow, layered with a gentle touch of black pepper. As it settles, simple, organic notes of maple syrup and fresh corn emerge, finishing with a nostalgic hint of kettle corn that ties sweetness and warmth together.
